Here's a simple recipe for anchovy sauce:
Ingredients:
- 4-6 anchovy fillets (canned in oil)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/4 cup white wine
- Freshly ground black pepper, to taste
- Optional: chopped parsley for garnish
Instructions:
- Heat olive oil and butter in a skillet over medium heat until the butter melts.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the anchovy fillets to the skillet and break them up with a spatula, allowing them to melt into the oil and butter mixture.
- Cook the anchovies for about 2-3 minutes until they dissolve and become fragrant.
- Pour in the white wine and stir, scraping up any browned bits from the bottom of the skillet.
- Let the sauce simmer for about 2-3 minutes until it thickens slightly.
- Season with newly ground dark pepper to taste.
- Remove the skillet from heat and serve the anchovy sauce immediately over pasta, vegetables, or grilled meat.
- Alternatively, decorate with slashed parsley for added newness.
Enjoy your anchovy sauce!
