Recipe for anchovy sauce


Here's a simple recipe for anchovy sauce:

Ingredients:

  • 4-6 anchovy fillets (canned in oil)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup white wine
  • Freshly ground black pepper, to taste
  • Optional: chopped parsley for garnish

Instructions:

  1. Heat olive oil and butter in a skillet over medium heat until the butter melts.
  2. Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the anchovy fillets to the skillet and break them up with a spatula, allowing them to melt into the oil and butter mixture.
  4. Cook the anchovies for about 2-3 minutes until they dissolve and become fragrant.
  5. Pour in the white wine and stir, scraping up any browned bits from the bottom of the skillet.
  6. Let the sauce simmer for about 2-3 minutes until it thickens slightly.
  7. Season with newly ground dark pepper to taste.
  8. Remove the skillet from heat and serve the anchovy sauce immediately over pasta, vegetables, or grilled meat.
  9. Alternatively, decorate with slashed parsley for added newness.
